ROASTED PEPPERS SALAD

Growing up in Andalusia, and more specifically in the Cadiz region, you learn how to enjoy life and cook quick and tasty recipes to enjoy the most amazing local climate.

Today we are looking at a fantastic roast pepper salad, easy to make to go with your favourite food. A few simple ingredients with a spin of olive oil and its ready to go with fish, seafood, chicken or any meat you prefer.

 

INGREDIENTS

Roasted Peppers, about 4 Bell Pepper – I love red ones, makes the dish look super attractive.

Onion – 1 onion

Garlic – 2 or 3 garlic cloves

Olives – Chopped green or black olives.

Parsley – 1 tablespoon fresh parsley

Olive oil – 2 tablespoons extra virgin olive oil

Vinegar – 1 teaspoon to taste

Salt and pepper to taste

 

Servers 4

Time – 10 minutes + Roast for 30-35 mins or 1 min if you open a jar.

Calories – about 50g per serving

 

INSTRUCTIONS

  • Quickly fry an onion and garlic in olive oil until soft, then remove from the heat and set aside to cool.
  • Slice the roasted pepper into strips.
  • In a salad bowl, place the roasted peppers, onion, and garlic together with the olive oil used to cook them, parsley, chopped green olives, salt, and pepper to taste.
  • Add more olive oil and vinegar to season with salt and pepper.
  • Serve with a bit of chilli.
  • Enjoy it and share with your friends.
